Thanks to their attractive color and their slightly acidic taste, dried barberries can be freely used in both sweet and savory dishes.

The fruit of this plant from the Berberidaceae family has a very pleasant, acidulous flavor and a lovely red color.
Iran is the world’s leading producer of barberries. The bushes grow naturally in the Khorasan region, where they cover an area of over 6400 hectares, providing an annual yield of over 8400 tons. The barberries that we offer come from wild bushes that have not undergone any chemical treatment.

 

History

From ancient times, the people of the Himalayas have recognized its health benefits and used it in drinks. In the 1st century AD, the Greeks drank its extract. In Italy, in the Middle Ages, we find the first written evidence of its use in medicine.

 

Suggestions

Barberries may be used in savoury and sweet dishes. The berries will rehydrate naturally in a damp environment. For savoury dishes, we recommend rinsing the berries and browning them in a knob of butter for two or three minutes over a gentle heat, ideally with a few infused stigma of saffron. Add them to your dish. For desserts, barberries are a wonderful addition to cakes, crumbles, fruit salads, ice creams and chocolate desserts.
